CUPCAKE WARS

Hellooo, people of the Internet!

This is my 10th post! Wooo, what a nice number! (yeah, I’m still (kinda) counting)

By the way, do you like muffins? Yes? Okay then, this post is for you so keep reading.

So my little cousin visited us a few weeks ago. As my mom’s working, I had to come up with some activities that would be interesting for her and make sure she’s not bored so I thought it would be awesome to bake some cupcake/muffins as she really likes them. I’ve searched for some (three, to be exact) new and never tried recipes for the sake of experimenting.

There were dozens of bowls laying around, random spoons and forks everywhere, flour on the ground and on our clothes (you now what I’m talking about if you’ve ever cooked or baked something with a kid before hahah). Just a complete mess everywhere but it was all worth it because my cousin was soooo happy and hyped up about it. I wish you saw her face… She kept saying: “Its just like at “Cupcake Wars”!!” That was just… priceless.

After a whole day in the kitchen (that’s how it is supposed to be ’cause we’re women, right haha? NO.), we ended up with more than 40 cupcakes/muffins. The chocolate ones with caramel didn’t really turned out great.. They were too dry and too spongy (maybe because we over-baked them) but the ones with strawberries and rhubarb were deiciousssss. So today I want to share their recipes (P.S. I didn’t come up with them myself. Just found in an old magazine and/or Internet).

These turned out soo soft and tasty! And you can make them anytime you want because the ingredients are so basic and, I believe, everyone can find them in the fridge. That’s just another plus for the recipe!

You will need:

  • 150g of sugar
  • 2 eggs
  • 150g of greek yogurt
  • 80g of unsalted butter
  • 200g of flour
  • 1tsp of baking powder
  • Handful of fresh or frozen strawberries (If you’re allergic to strawberries or just don’t like them in general, feel free to change them with blueberries, raspberries or whatever fruit or berries you like.)

Let’s go!

  • Preheat the oven to 180 degrees.
  • Melt your butter and mix it with sugar, eggs, yogurt.
  • Sift the flour and mix it with baking powder.
  • Mix wet and dry ingredients until the clumps are gone.
  • Place the cupcake cups/liners/paper in your cupcake pan and fil 2/3 of them with batter. Press in a strawberry in the middle of each cupcake.
  • Bake for 25-30 minutes.
  • You can top them with fresh strawberries to add some color.

Muffins with rhubarb fillingNaujas aplankas (2) (724x1024)

The muffin is a bit on the sweeter side but the filling is kinda sour. Sooo.. can you feel the balance in here? haha

You will need:

Batter:

  • 2 eggs
  • 130g of sugar
  • A drop of vanilla extract
  • 140ml of kefir or greek yogurt
  • 60ml of oil
  • 200g of flour
  • A pinch of salt
  • 1,5tsp of baking powder

Filling:

  • Some rhubarb stems (~170g)
  • 40g of sugar (or more. Depends on what you like ^^
  • 20ml of lemon juice
  • Some lemon zest
  • 10ml of cold water
  • 10g of starch

Let’s go!

Batter:

  • Preheat the oven to 180 degrees.
  • In one bowl beat the eggs with sugar and vanilla extract, ad kefir/yogurt, oil and mix very well.
  • In another bowl sift your flour, salt, baking powder
  • Mix dry and wet ingredients so that there are no clumps left.
  • Place the cupcake cups/liners/paper in your cupcake pan and fill them with batter.
  • Bake for 25-30 minutes.

Filling:

  • Peel and cut the rhubarb stems.
  • In a pot add your small pieces of rhubarb, sugar, lemon juice, lemon zest and let cook for about 5 minutes on low heat
  • Turn the heat off.
  • Mix the water and starch together and mix this whole thing to the rhubarb paste.
  • Let it cool.

Final touches:

  • Fill your cupcakes with the sour rhubarb paste. Do that with a piping bag or you can cut a  hole in the center of your muffins and add the filling with a spoon. If you prefer, you can even spread the filling on top of the muffin. Whatever you prefer!
